Toddlers, bigs kids & adults alike LOVE this sandwich. I call this a "lazy mom" meal because it is so quick and easy to make! But nothing about this sandwich tastes lazy. Plus... did you know that two tablespoons of dried basil has the same amount of calcium as a glass of milk?! TRUTH.
(I use fresh in this recipe, the calcium content is slightly lower because of the water content but still very high in Calcium!)
burrata cheese (the mozzarella in water)
3 cups basil
1 garlic clove
1/2 cup parmesan
1/3 cup extra virgin olive oil
salt & pepper to taste
slice ciabatta loaf into desired sandwich size
slice tomatoes & burrata into rounds, layer on top of one of your ciabatta slices. (recommended: 1 piece burrito & tomato per 1/2 sandwich)
put the basil, garlic, parmesan, salt, pepper & olive oil into a small food processor or blender. Pulse until you reach the desired consistency
spread 1 tablespoon of pesto per half sandwich
SERVE with berries/fruit on the side!
